In sfirsit mi-am montat singur cuptorul pe lemne (www.cuptoareculemne.ro)
Reteta blat pizza:
Dintr-un kg de faina se obtin 7-8 pizza , diametru 30 cm, cu blat subtire.
- 1 kg faina
- 2 pliculete drojdie uscata
- 650 gr apa calduta
- 1 lingura sare de mare fina
- 4 linguri ulei de masline
- 1 lingura rasa zahar pudra
Intr-un vas se amesteca apa calduta cu drojdia, se adauga cele 4 linguri de ulei de masline si 1 lingura rasa de zahar pudra.
Intr-un lighean sau direct pe blatul de lucru se amesteca kg de faina cu 1 lingura de sare de mare fina. Cu podul palmei se face o gaura in mijloc si se toarna amestecul de mai sus.
Cu o furculita se aduce usor dinspre margini catre centru faina. Se amesteca cu mainile pina ce obtineti o coca omogena – blatul de pizza.
Nu este nevoie sa o framantati prea mult, ci doar pana ce devine omogena.
Se pune intr-un vas, presarat cu faina, se acopera cu un servet umed si se lasa intr-o camera la caldura minim 1 ora – maxim 2 ore. Este gata cand isi dubleaza volumul.
Reteta sos rosii pizza:
- 1 sticla de sos rosii marca Cirio – Passata Rustica
- 7-8 catei de usturoi, tocati foarte marunt
- 5-6 tulpini busuioc proaspat tocat (sau uscat – 1 lingurita)
- 1 lingurita oregano uscat
- 1 lingura rasa sare de mare
- piper (dupa gust)
Se pun toate ingredientele intr-un vas, se amesteca si sosul e gata. Nu este nevoie sa il gatiti.
Dupa ce coca pentru blat a crescut, se pune din nou pe blatul de lucru, se framanta bine citeva minute pentru a scoate tot aerul din ea si se separa in bile de 7-8 cm diametru.
Daca se lipeste de maini se mai poate presara faina.
Se ia o bila, se intinde cu facaletul pina ce blatul devine subtire.
Presarati faina ori de cate ori intoarceti blatul.
Cu o lingura puneti sos de rosii si intindeti pe toata pizza, fara a exagera.
Nu mai ramane decat sa puneti topping-urile care va plac.
Orice pizza are 2 ingrediente obligatorii: sos de rosii si mozzarella.
Eu am pus in diverse combinatii:
- sos de rosii
- mozzarella
- prosciuto
- felii subtiri de rosie
- masline negre taiate felii
- ardei gras
- chorizo (salam picant)
- ciuperci proaspete (taiate felii)
- busuioc proaspat
- file ansoa
- ton
- rucola proaspata
- somon afumat
- oua prepelita
Retea sos picant pentru pizza:
Intr-un mojar se pun 1-2 ardei iuti taiati marunt cu tot cu seminte, sare si piper si se bat bine. Se adauga 10 linguri de ulei de masline, se amesteca si gata sosul.
Se presara pe pizza imediat ce o scoateti din cuptor.
